Resumo
No contexto do mercado de cafés especiais, diversas ações são realizadas com a finalidade de disseminar a produção de cafés de qualidade, de estreitar a relação entre os produtores e seus compradores e de possibilitar aos cafeicultores a oportunidade de acesso aos novos recursos tecnológicos para a sua produção. Entre estes eventos, os concursos de qualidade vêm se destacando por trazerem diferentes benefícios para o mercado a partir das práticas realizadas por diferentes atores. Entre estes concursos, o programa Cup of Excellence (COE) assume destaque no cenário cafeeiro, por promover um concurso de qualidade realizado por juízes renomados nacional e internacionalmente, e, também, por produzir ao final dos concursos um prestigioso leilão virtual, que oferece aos compradores do mundo todo a oportunidade de adquirir os melhores lotes de cafés especiais dos países que sediam o evento. No caso do Brasil, a história do programa COE completou, em 2019, 20 anos, e proporcionou durante todo este tempo importantes modificações no mercado. Diante deste contexto, o presente trabalho tem como objetivo geral compreender como o concurso de qualidade de café COE performou o processo de construção do mercado de cafés especiais no Brasil. Para isso, adotou-se a abordagem teórica dos Estudos de Mercado Construtivistas (EMC), que vem ganhando corpo no meio científico e trazendo diversos achados a partir de trabalhos empíricos em variados contextos. Esta perspectiva de análise apresenta-se como uma possível alternativa de buscar a compreensão da dinâmica construtiva do mercado a partir de um prisma de análise histórico. Para a realização desta pesquisa, adotou-se uma perspectiva interpretativista e foram utilizadas técnicas qualitativas de pesquisa para a coleta de dados como observação direta e não-participante, analise documental e entrevistas em profundidade. Nos resultados, inicialmente, realizou-se uma reconstrução histórica a fim identificar momentos que os concursos de qualidade, em especial o COE, transformaram o mercado de cafés especiais no Brasil. A partir do reconhecimento destes importantes acontecimentos, práticas e arranjos de mercado foram identificadas e, na sequência, interpretadas sob o enfoque dos EMC. Posteriormente, foram destacas as contribuições do COE no mercado de cafés especiais no Brasil. Entre elas, destaca-se o legado técnico do COE que performou o mercado a partir de diferentes práticas de mercado, seja na concepção de um formulário de provas, que se tornaria um modelo normativo diversos concursos de qualidade; e pelos protocolos e regras do concurso que trouxeram transparência e integridade, valores buscados na filosofia do concurso e repassados para outros atores deste mercado. Por fim, foram apresentadas as limitações da pesquisa e possíveis temas para estudos futuros.
In the context of the specialty coffee market, several actions are carried out in order to disseminate the production of quality coffees, to strengthen the relationship between producers and their buyers and to enable coffee growers the opportunity to access new technological resources for their production. Among these events, quality competitions have stood out for bringing different benefits to the market based on the practices carried out by different actors. Among these competitions, the Cup of Excellence (COE) program stands out in the coffee scene, for promoting a quality competition held by nationally and internationally renowned judges, and also for producing at the end of the competitions a prestigious virtual auction, which offers buyers from all over the world the opportunity to purchase the best batches of specialty coffees from the countries that host the event. In the case of Brazil, the history of the COE program completed 20 years in 2019, and provided important changes in the market throughout this time. In this context, the present work has the general objective of understanding how the COE coffee quality competition performed the process of building the specialty coffee market in Brazil. For this, the theoretical approach of Constructivist Market Studies (CMS) was adopted, which has been gaining body in the scientific environment and bringing several findings from empirical works in different contexts. This analysis perspective presents itself as a possible alternative to seek to understand the constructive dynamics of the market from a historical analysis perspective. To carry out this research, an interpretive perspective was adopted and qualitative research techniques were used to collect data such as direct and non-participant observation, document analysis and in-depth interviews. In the results, initially, a historical reconstruction was carried out in order to identify moments that the quality competitions, especially the COE, transformed the specialty coffee market in Brazil. From the recognition of these important events, practices and market arrangements were identified and, subsequently, interpreted under the focus of the CMS. Subsequently, COE's contributions to the specialty coffee market in Brazil were highlighted. Among them, we highlight the technical legacy of the COE that performed the market from different market practices, whether in the design of a proof form, which would become a normative model for several quality competitions; and by the protocols and rules of the competition that brought transparency and integrity, values sought in the competition's philosophy and passed on to other players in this market. Finally, the limitations of the research and possible themes for future studies were presented.
