QUALIDADE DO CAFÉ PRODUZIDO EM AGRICULTURA FAMILIAR NO NORTE PIONEIRO PARANAENSE

As Redes de Referências são importantes instrumentos de transferência de tecnologia para subsidiar a agricultura familiar com técnicas apropriadas e novos arranjos de seus sistemas de produção para possibilitar melhoria de renda e de qualidade de vida. O café faz parte dos sistemas de produção da região Norte Pioneira e participa na composição da renda familiar nos sistemas de produção vigentes. Na comercialização do café, a presença de defeitos e a qualidade da bebida são critérios básicos que determinam o preço pago ao produtor, de tal maneira que a rentabilidade da cultura está associada à qualidade do produto ofertado. O objetivo deste estudo foi caracterizar o café produzido em propriedades participantes do projeto de Rede de Referências da região Norte Pioneiro a fim de propor ações que promovam aumento de renda nos sistemas onde o café é um componente expressivo. Foram coletadas 25 amostras de café colhidas no estágio cereja e preparadas pelos produtores na forma de café natural ou como cereja descascada. Nos cafés beneficiados determinou-se a granulometria, a presença de defeitos e a qualidade de bebida. A composição química foi avaliada através da determinação de proteínas, açúcares totais e redutores, compostos fenólicos, ácidos clorogênicos e cafeína. Os defeitos preto, verde e ardido foram os principais encontrados e sua presença se refletiu na qualidade de bebida e na composição química do café. A identificação e quantificação dos defeitos, a qualidade de bebida, apoiada na composição química do café tornam-se, assim subsídios no direcionamento das ações da Rede de Referência nos processos de pós-colheita para evitar a formação dos defeitos que tanto prejudicam o aspecto físico e a bebida do café.
Networks of References are important instruments of transference of technology to support family agriculture through appropriate techniques and new arrangements of their production systems. It is though those arrangements provide their income and improve their quality of life. Coffee participates in the production systems of the Northeast Region Pioneer in Paraná and it is an important part in the composition of income in production systems prevailing in this region. In the marketing of coffee, the presence of defects and the beverage are basic criteria that determine the price paid to producers, so that the profitability of the crop is associated with quality of product offered. The objective of this study was to characterize the coffee produced the project participants Network of Reference of Northeast Region Pioneer in Paraná in order to propose actions that promote increase in income in systems where the coffee is a significant component. Twenty five samples of coffee were harvested and prepared by the producers. In the processed coffee were determined the bean size, the presence of defects and quality of beverage. The chemical composition was assessed by determination of protein, total and reducing sugars, phenolic compounds, chlorogenic acids and caffeine. Defects black, green and sour beans were the principal defects and their presence was reflected in the quality of beverage and chemical composition of coffee. The identification and quantification of defects and beverage quality, based on the chemical composition of coffee become in this way important subsidies in directing the actions of the Network of Reference in the processes of post-harvest to avoid the formation of defects, which affect both the physical aspect and beverage coffee.
