Estimou-se a vida útil de cappuccino com um modelo matemático que relaciona o aumento de umidade do produto com a taxa de permeabilidade ao vapor d’água (TPVA) das embalagens. Avaliou-se três materiais flexíveis para cappuccino, em dois tamanhos (sachet - 10g e stand up - 100g), quanto à TPVA, e utilizou-se de isotermas de sorção de umidade de cappuccinos da literatura. Utilizando-se laminados compostos de PET metalização alta barreira/PE, estima-se períodos de vida útil de 8 a 18 meses na embalagem sachet e períodos de vida útil superior a dois anos na embalagem stand up. Entretanto, se for utilizado PET com metalização convencional, estima-se períodos de vida útil de 5 a 12 meses na embalagem stand up.
Cappuccino shelf-life was estimated by a mathematic model, which relates the product moisture increase with the water vapor transmission rate (WVTR) of the packages. Three flexible materials of two sizes (sachet - 10g and stand up - 100g) were evaluated as to the WVTR, and moisture sorption isotherms of cappuccino, obtained in the literature, were used. Using laminated materials composed by PET/met high barrier/PE, it is possible to estimate shelf-life periods of 8 to 18 months in the sachet packaging and shelf-life periods higher than two years in the stand up packaging. However, if PET with conventional metallization was used, the shelf-life periods in the stand up packaging would be of 5 to 12 months.
