    Cup of excellence and the evolution of the brazilian specialty coffee market: a historical perspective

    Over its more than 20 years of existence, the Cup of Excellence program has contributed in several ways to the expansion of the Brazilian and global specialty coffee market. Therefore, the aim of this research is to demonstrate, from a historical perspective, the role of the COE in the development of the Brazilian specialty coffee market. To this end, a timeline was drawn up with the main events in the Brazilian specialty coffee market from the late 1980s to the present time. Documentary and bibliographical research was used. In addition, in-depth interviews were conducted. Based on the results, it is evident that the technical legacy left by the COE changed the specialty coffee market not only in Brazil but throughout the world. The results also show that the forms, protocols and rules that regulated the competition’s editions had an impact on the entire market, including production processes and consumption trends.

    Evaluation of agronomic performance of coffee (Coffea arabica L.) cultivars in Gamo and Gofa, southern Ethiopia

    Ethiopia is identified as a primary centre of Arabica coffee plant origin and genetic diversity. Climatic variations, varietal differences, soil type, mulching, shade, the farming method used, pruning, and other cultural practices are the major factors that affect the development of plants including coffee. Amongst the various factors for having a good yield of coffee is growing of coffee plant in its specific agro-ecologies which has a great contribution to both the life span of the coffee trees and its yield. This experiment was conducted to evaluate the performance of different released and local Arabica coffee varieties across two locations at Gamo and Gofa zones, Southern Ethiopia. The varieties which were used for the study were transplanted in 2014 and laid out in randomized complete block design with three replications across locations. The varieties were planted at a spacing of 2m by 2m between plants and rows, respectively and were evaluated for growth, yield and yield components. The analysis of variance performed for average internodes number, canopy diameter, height up to the primary branch, length of the primary branch, number of branches on the main stem and total height of coffee plant showed significant variations across locations. From the present evaluation, it was noted that the highest Clean Coffee Yield (16.6 and 14.2 quintal per hectare) was scored by coffee cultivars F-59 and 1377A, respectively. Moreover, because of the low quality of coffee delivered to the market, the coffee produced in the Gamo Gofa area (garden coffee) is categorized under forest coffee at the national level. If the quality is improved, the coffee in the area would have its appropriate brand name and the growers and traders can get better returns from their investment. Therefore, those varieties investigated are good candidates for future coffee cup quality analysis.

    Young coffee leaves biotransformed by aspergillus oryzae in enriched source of caffeic acid

    This research focused on the study of young coffee leaves as a potential source of caffeic acid from the biotransformation of abundant chlorogenic acid. Aspergillus oryzae was isolated from koji rice and used for the solid-state fermentation of coffee leaves. The bioconversion of chlorogenic acid into caffeic acid was measured by HPLC-DAD. The water infusions of fermented coffee leaves were analyzed by sensory evaluation in comparison with unfermented coffee leaves as well as roasted coffee beans. The biotransformation of young coffee leaves yielded over 3.5-fold change increase of caffeic acid natural content in 87 hours, and equivalently, decreasing concentrations were observed for chlorogenic acids. Other bioactive compounds, such as mangiferin, rutin and caffeine, showed relatively minor changes. Sensory evaluation pointed out the effect of increasing caffeic acid-concentration on bitterness and astringency, which would have to be considered in the development and optimization of functional foods. As bitterness was increased by the enhanced caffeic acid concentrations, desirable flavor descriptors were also associated with fermented leaves, with the inclusion of notes traditionally associated with koji. This bioprocess proved to be highly efficient and could be implemented with relatively simple technology in-farm production systems.

    Low concentration fertigation solution allows greater macronutrient use efficiency in coffee seedlings

    Coffee seedling production in cone-shaped containers and substrate results in lower sanitary risk and costs. With the use of small containers and sub strates with low fertilizer levels, fertigation is necessary for seedling development. An experiment was carried out with three macronutrient concentra tions (electrical conductivities of 1.0, 2.0 and 3.0 dS m-1) and a non-fertilized control using Coffea arabica cv. Topázio seedlings in 50 cm3 cone-shaped containers and composted pine bark-based substrate. The following fertilizers (expressed in g m-3 of water) were used in the nutrient solution with EC of 1.0 dS m-1: Ca(NO3)2 (400), KNO3 (250), MgSO4 (175), (NH4)PO4 (50) and ConMicros Standard® (25). In the solutions with 2.0 and 3.0 dS m-1, macronutrient concentration was doubled and tripled, while micronutrients remained the same. At four months we assessed EC and pH of the solution drained, shoot dry mass, shoot nutrient concentration and accumulation and macronutrient use efficiency. Fertigation with 1.0 and 2.0 dS m-1 produced seedlings with greater mass (+10%) than fertigation with 3.0 dS m-1, while higher macronutrient supplies increased shoot N, P, K, Mg and S concentration. Fertigation with 2.0 dS m-1 caused greater shoot N, P, K and Ca accumulation and this conductivity also resulted in higher accumulation of B, Fe, Mn and Zn without increasing the micronutrient supply. The response to the increase in Ca in the nutrient solution is evident in the accumulation of this nutrient in the plant but not its concentration, possibly due to the dilution effect. Micronutrient accumulation in this species is also more adequate for determining nutritional status than the concentration in the plant. The least concentrated macronutrient solution increases nutrient use efficiency in C. arabica seedlings as well as being economically and environmentally more sustainable.

    Evaluation of species transfer models in the cfd simulation of fixed bed soybean drying

    The drying is fundamental to the preservation of materials, particularly food, which is sensible to damaging related to moisture because of its hygroscopic nature. The drying increases the shelf life of these products and reduces their overall weight, which facilitates the logistics and aggregates value to the product. Computational Fluid Dynamics is a potentially facilitating tool for the analysis of drying variables, such as velocity, air temperature, and particle temperature, which have great influence on the drying rate. This work aimed at studying different numeric models for the simulation of a fixed bed drying operation, analyzing the influence of the equilibrium ratio and water diffusivity in the solid on the results. The computations were made in the software FLUENT 19.2, using the Multiphase Eulerian Granular Model with packed bed configuration and different mass transfer models: Constant, Species-Con stant, Species-Sherwood, Ranz-Marshall, and Hughmark, as well as heat transfer models: Constant Heat Transfer Coefficient, Constant Nusselt Number, Ranz-Marshall, and Hughmark. The mass transfer models with the best performance were the Ranz-Marshall and Hughmark models. A strong influence of the equilibrium ratio was observed for both models, and a moderate influence of the water diffusivity. The influence of equilibrium ratio and water diffu sivity was not observed for the other models. The heat transfer models did not present expressive difference, and the system reached thermal equilibrium quickly. The overall study of the models and the influence of different parameters was effective, and was able to document the obtained results for future optimization and further investigation of the numeric model.

    Alternative treatments diminish oviposition and viability of Leucoptera coffeella (Lepidoptera: Lyonetiidae) eggs and larvae on coffee plants

    The effects of alternative treatments on the oviposition and viability of Leucoptera coffeella eggs and larvae were evaluated. Under controlled conditions, coffee sprouts cv. IAPAR-59, eight months old, were sprayed with brown propolis extract (1%), pyroligneous extract with pepper and garlic (PEPG) (2%), silicate clay (2%), kaolin (5%), lime sulfur (2%), neem oil (1%) and kaolin + neem oil (5% + 1%), distilled water and no treatment. In a first no-choice bioassay, coffee sprouts were sprayed before oviposition and kept in cages, where adult insects within three days after emergence were released. Adults remained in the cages for 24 hours. Eggs were then counted. 10 eggs per sprout were preserved to verify larval mortality. The number of eggs when treated with propolis extract, neem oil, kaolin + neem oil and PEPG decreased in the evaluations. Treatments with neem oil caused greater larval hindrance. Eggs laid on leaves were also sprayed with the treatments. Egg viability was reduced by treatments containing neem oil and lime sulfur. Neem oil treatments resulted in slim adult emergence; intermediate viability with lime sulfur and slight hindrance with silicate clay. Finally, treatments were also sprayed on leaves, hosting first or third instar larvae. Neem treatment caused high mortality for 1st and 3rd instar larvae, however, this effect was reduced when mixed with kaolin. Nonetheless, these negative effects disappeared when considering the adult survival ratio. Results indicated that propolis extract, PEPG and neem oil treatments are suitable for reducing egg deposition, neem oil considerably diminished larvae survival and adult emergence.

    Effect of tropical millipede Rhinocricus botocudus in the degradation and maturity of coffee residues

    In Brazil, approximately 3 tons of dry mass per hectare of coffee residues (CR), formed by leaves and branches <5 mm in diameter, were accumulated around the crops in the last harvests of the semi-mechanized crops. Thus, the production of substrates and organic fertilizers from the bioconversion of residues of coffee activity is an important theme in Brazil and in the world. The objective of the study was to investigate the effectiveness of the tropical millipede Rhinocricus botocudus on the degradation and maturity of coffee residues (CR). The presence or absence of R. botocudus were tested in five sampling times (0, 30, 60, 90, and 120 days) with three replicates (n = 3). The analyzed variables were: total C and N contents, lignin, cellulose, soluble C and N, soluble polyphenols, C of humic substances, and infrared analysis of humic acid (HA) and fulvic acid (FA). At the final incubation stage (120 days), the lowest values of cellulose, cellulose/lignin, and polyphenols occurred with R. botocudus. Infrared analysis of HA demonstrated that readily biode gradable structures, such as alcohols and short chain aliphatic molecules, were decomposed over time, consequently reflecting the increase of aromatic structures of greater stability. Compared to the control, these changes in HA were more evident in the presence of R. botocudus. The results of the present study suggest that this millipede species modify the dynamics of degradation and humification of CR by accelerating the maturity of this residue.

    Water retainer polymer in coffee plants deployment under different levels of irrigation

    The use of water-retaining polymers may be a feasible alternative in regions with low water availability, as they has enhance the performance of coffee plants with more favorable anatomical characteristics to make physiological processes more efficient. However, the advantages of such use have been scarcely reported. Here, we studied the feasibility of using a water-retaining polymer to optimize irrigation water use during the establishment of a coffee plantation. A randomized block design was used in a factorial scheme (4 × 2) with three replications for a total of 24 experimental plots, each consisting of four pots, with one plant per unit. The experiment was installed in a greenhouse at the Coffee Science Department of the Universidade Federal de Lavras, Minas Gerais, Brazil, with four levels of irrigation (25%, 50%, 75%, and 100% of soil water at field capacity), with or without addition of the water-retaining polymer. Growth variables evaluated included: plant height, stem diameter, number of leaves, shoot and root dry weights, root volume and area. Additionally, gas exchange, leaf water potential, and leaf anatomy were analyzed. The use of water-retaining polymer during establishment of the coffee plantation ensured sufficient water supply, thus guaranteeing plant anatomical and physiological functionality and, consequently, a healthy, vigorous growth.

    Tasters’ performance in a coffee quality contest in Brazil

    The objective of this work was to evaluate the performance of coffee tasters in five annual editions of Minas Gerais Coffee Quality Contest. The repeat ability coefficients of the tasters’ scores for sensory attributes were estimated, as well as the minimum numbers of tasters required for consistent sensory results, and the groups of tasters by (dis)similarity of sensory scores. For the repeatability analysis, the treatments (coffees) were tested with the repeti tions, constituted by the tasters. The repeatability coefficients were estimated using the analysis of variance, principal component and structural analysis methods. The minimum number of tasters was obtained based on pre-established determination coefficients. Euclidean distance matrices between tasters were determined, which were used as a measure of dissimilarity for cluster analysis by the Tocher optimization method. The tasters’ performance in five annual editions of Minas Gerais Coffee Quality Contest is reliable using COE or SCA sensory analysis protocols. Although not fully calibrated, most tasters are grouped with similar cupping results. Unless efficient calibration prior to the contest is adopted, the number of tasters to be used in the next contest editions can not be drastically and randomly reduced, since the estimated minimum number varied over the years. Calibration activities are sug gested to improve two main aspects of the Minas Gerais Coffee Quality Contest: distinguishing the best coffees and trainning tasters.

    Sensory Assessment of Gayo arabica coffee taste based on various varieties and manual brewing devices

    Arabica coffee (Coffea arabica) becomes one of the most in-demand types by the community due to its typical taste. The material needed in this study was Gayo Arabica coffee (full wash) obtained from farmers in Bener Meriah, Aceh Province of Indonesia and specially ordered. The right method and coffee brewing device are needed to obtain this typical taste of coffee. One of the coffee brewing methods that keeps developing until now is the manual brewing method. This study aims to find the sensory assessment of Gayo Arabica coffee taste in various varieties with manual brewing devices by using Analytical Hierarchy Process (AHP) method. Manual brewing devices used were Vietnam Drip, French Press, V60, Eva Solo, and Filter, while the chosen va rieties are Tim-tim (Gayo 1), Bor-bor (Gayo 2), and P88. The study result showed that based on the preference of product acceptance by the panelists, the most chosen criteria of taste sensory were flavor (0.253), followed by aftertaste (0.222), sweetness (0204), acidity (0.165), and body (0.155). The variety chosen as the best variety with manual brewing was Tim-tim in various manual brewing devices, which are V60 (0.156), French Press (0146), and Eva Solo (0.140). The next alternatives brewing devices were Vietnam Drip (0.127) and Filter (0.109). Thus, it could be concluded that flavor is the top priority that influences Gayo Arabica coffee’s taste. Therefore, Tim-tim with manual brewing devices (V60, French Press, and Eva Solo) is preferred over other varieties in this study. This finding also becomes a recommendation that the variety for the best serving of Gayo Arabica coffee brew with the most preferred taste with manual brewing devices is Tim-tim.
