    Technological and nutritional aspects of dark chocolate with added coffee husk flour

    The objective of this work was to produce dark chocolates with the addition of coffee husk flour (CHF) and to evaluate the generated effects on their physical, physicochemical, microbiological, textural, and rheological characteristics. Husks of the Pacamara coffee (Coffea arabica) variety, produced under organic management, were used. The samples were previously dried, ground, and sieved at 0.250 mm. Five chocolate formulations were previously standardized at 55% content of cocoa solids (mass and cocoa butter) and at 0.4% soy lecithin. The addition of CHF was tested at the concentrations of 0, 2.5, 5.0, 7.5, and 10%, using a completely randomized design and three replicates. The addition of CHF up to 10% alters the physicochemical, textural, and rheological properties of the chocolate formulations, but without compromising their composition and quality. The tested formulations only differed regarding hardness and cohesiveness, evaluated in the texture profile. The hardness of the chocolate formulations increases as CHF is added.

    MGS Aranãs: the new Arabica coffee cultivar developed by Epamig with wide adaptation

    This paper describes the MGS Aranãs cultivar (H32-11-17-4-2-MS-MS) resulting from a cross between the cultivars Icatu 3851-2 and Catimor. The MGS Aranãs cultivar is characterized by small size, ripe red fruits, large seeds, coffee leaf rust resistance, an architecture suitable for densification, production stability, and high beverage quality. This new cultivar is recommended for the Sul de Minas, Cerrado Mineiro and Vale do Jequitinhonha regions.

    Evaluation of Conilon coffee productivity intercropped with Ambarella (Spondias dulcis Parkinson)

    The State of Espirito Santo (Brazil) has 9.4 % of its area cultivated in full sun, monocrop coffee. Coffee has a great importance for the State and a dependence on just one product can make farmers vulnerable to price fluctuations. Integrating coffee (Coffea canephora Pierre ex Froehner) intercropped with Ambarella (Spondias dulcis Parkinson) offers environmental benefits and an extra financial combination through the commercialization of Ambarella fruits. The goal of this study was to verify the effects of the distance and orientation (East-West versus North-South) between Ambarella on coffee crop yield. We assessed two different coffee crops spaced (3 x 1.5) m. Both were intercropped with Ambarella spaced (15 x 7.5) m. The average coffee productivity varied from (2,177 to 7,346) kg plant-1. The lowest productivity was measured in the North-South orientation, during 2016, and the highest in the East-West orientation during 2017. Our findings also indicate that regardless of planting distance, Ambarella did not significantly affected coffee productivity demonstrating that it can be a promising fruit tree to intercrop with Conilon coffee.
