    Post-harvest of coffee: factors that influence the final quality of the beverage

    Brazil is the world’s largest producer and exporter of coffee and the second largest consumer market. Brazil offer differentiated and high quality products to maintain its leading position in coffee production and export. However, Brazilian coffee has suffered some limitations in its commercialization in the international market, due to qualitative aspects. The development of taste and aroma is highly complex, since hundreds of chemical reactions take place at the same time, such as the breakdown of proteins, polysaccharides, trigonelline and chlorogenic acid, mainly in the roasting process. Then, it is necessary that, in addition to pre-harvest management, there are post-harvest practices that meet consumer demands regarding the final quality of the beverage. Studies on physical and chemical changes in the composition of coffee beans must continue to be performed in a comprehensive manner, since factors such as damage to coffee beans, drying methods, processing, storage time, type of packaging and chemical components are directly related to sensorial properties and thus define the quality of the beverage at this point of view. Thus, the objective of this review was to relate the physicochemical, biochemical and physiological characteristics of coffee beans after harvest with the quality of the product after roasting.

    MGS Aranãs: the new Arabica coffee cultivar developed by Epamig with wide adaptation

    This paper describes the MGS Aranãs cultivar (H32-11-17-4-2-MS-MS) resulting from a cross between the cultivars Icatu 3851-2 and Catimor. The MGS Aranãs cultivar is characterized by small size, ripe red fruits, large seeds, coffee leaf rust resistance, an architecture suitable for densification, production stability, and high beverage quality. This new cultivar is recommended for the Sul de Minas, Cerrado Mineiro and Vale do Jequitinhonha regions.

    Sensory quality of Coffea arabica L. genotypes influenced by postharvest processing

    The specialty coffee market has grown significantly in the past decades and has several cultivars with productive potential. The objective of this study was to evaluate the sensory profile of the beverage produced from Coffea arabica L. genotypes based on postharvest processing and to identify cultivars with the greatest genetic potential for coffee cultivation in the city of Araponga, Minas Gerais, Brazil. The experiment was a randomized complete block design with two replicates and 11 genotypes with different levels of resistance to rust. The sensory profile demonstrated an interaction between the genotype and the processing technique. Five of the genotypes presented total scores above 85 points according to the SCAA protocol. Moreover, two of these genotypes yielded heightened sensory notes after undergoing dry processing. The selection of coffee genotypes should consider the level of technology involved in the drying of the coffee beans, which preserves the potential quality of the beverage.

    Sensory profile of arabica coffee accesses of the germplasm collection of Minas Gerais – Brazil

    This study was developed to determine the beverage quality and the sensory profile of Coffea arabica accesses of the Germplasm Collection of Minas Gerais State in two consecutive harvests. Mature coffee fruits from 49 accesses were selectively harvested in the 2015 and 2016 harvests, and after processing and drying they were sensorially evaluated by a team of trained judges in accordance to the protocols of the Specialty Coffee Association. The data were analyzed by Principal Component Analysis, Cluster Hierarchical Analysis, and Content Analysis. The year of harvest influences the scores of the sensory attributes of the beverage of some coffee accesses. The access 27 (Pacamara) stood out with the highest sensory score seen in the first year of harvest. The accesses 36 (Timor Hybrid UFV376-52) and 43 (BE5 WushWush) stood out for the final sensory score in the two years of evaluation. All accesses belonging to the Timor Hybrid Germplasm stood out in the beverage quality in the second year of harvest. A total of 139 sensory attribute descriptors were identified, and the content analysis showed different levels for the frequency of terms in each access group formed as a function of quality. The Germplasm Collection of Minas Gerais has a wide variability for the production of superior quality coffees, and the year of harvest influences to a greater or lesser degree the potential of quality of the accesses.
