Item Personal characteristics of coffee consumers and non-consumers, reasons and preferences for foods eaten with coffee among adults from the Federal District, Brazil(Sociedade Brasileira de Ciência e Tecnologia de Alimentos, 2016-07) Sousa, Alessandra Gaspar; Machado, Liliane Maria Messias; Silva, Eduardo Freitas da; Costa, Teresa Helena Macedo daThe aim of this study is to describe the characteristics of consumers and non-consumers, the reasons and foods associated with coffee intake among adults from the Federal District, Brazil. This is a cross-sectional population-based survey conducted by telephone interview (n= 1,368). We collected information on detailed coffee intake, socio-demographic aspects and personal characteristics. The coffee had an average daily intake of 319 mL. Individuals were more likely to drink coffee at an older age (68%) and with higher body mass index (58%). The most cited reason for consuming coffee was the “personal pleasure” (48%), followed by “habit / tradition” of consuming coffee. Among non-consumers of this beverage, the main reason was not liking the taste and / or aroma of coffee (62%). The method of coffee preparation used was by infusion (86%) and sugar was the main sweetener used by 83% of consumers. The majority of consumers (59%) reported consuming coffee with certain foods such as bakery products. The results from our study may suggest that the popularity of coffee can be attributed to its taste, personal pleasure and habit, and the consumption is more likely to occur with the advance of age and with intake of other foods.Item Justificativas e motivações do consumo e não consumo de café(Sociedade Brasileira de Ciência e Tecnologia de Alimentos, 2009-10) Arruda, Aline Cristina; Minim, Valéria Paula Rodrigues; Ferreira, Marco Aurélio Marques; Minim, Luis Antonio; Silva, Neuza Maria da; Soares, Claúdio FurtadoO estudo do perfil dos consumidores e dos fatores envolvidos no processo de compra do café é uma ferramenta importante na identificação dos diferentes segmentos deste mercado e de suas potencialidades. Por outro lado, também é importante compreender porque alguns consumidores recusam a bebida. Portanto, objetivou-se neste trabalho entrevistar os moradores da cidade de Belo Horizonte – MG, a fim de identificar consumidores e não consumidores de café, para traçar o perfil de ambos, descrever suas características, fatores motivacionais e justificativas para consumo ou não do café. Para isto, 250 consumidores foram entrevistados e os resultados avaliados de forma descritiva. Os resultados revelaram que a bebida é consumida por uma parcela heterogênea e que corresponde à maioria da população. Em geral, os consumidores associam o consumo do café ao hábito, prazer, família, amizade e trabalho. Isso indica as motivações para o seu consumo reflete o significado social da bebida quer no âmbito doméstico, trabalho ou no círculo de amizade e que este significado está fortemente associado aos hábitos e costumes da sociedade brasileira. Observou-se a necessidade de expansão deste mercado entre os jovens.Item Survey on ochratoxin A in brazilian green coffee destined for exports(Sociedade Brasileira de Ciência e Tecnologia de Alimentos, 2004-10) Gollücke, A. P. B.; Taniwaki, M. H.; Tavares, D. Q.The presence of ochratoxin A (OTA) in foods has led some countries to establish regulatory limits. Although coffee is not a major source of OTA in human consumption, the European Community (EC) may establish limits in the near future, with possible economic impact on producing countries. This study measured the OTA content with HPLC in 37 samples of Brazilian green coffee exclusive destined to the export market and also verified a possible relation between coffee defects and OTA content. The results showed an OTA concentration ranging from < 0.16ng/g (detection limit) to 6.24ng/g (average of 3.20ng/g) for 37 samples. Of the five samples observed for defects, toxin content of sound beans ranged from 0.22 to 0.80ng/g (average 0.46ng/g) and of defective beans from 0.42 to 17.46 (average 4.52ng/g). Morphological differences among sound and defective beans showed no susceptibility for mould invasion under optical microscopy observation. One black bean depicted the presence of mould and spores on observation under Scanning Electron Microscope (SEM). According to this investigation, Brazilian green coffee for export complies with most limits in place.
